What is onion?

The onion is a herbaceous plant that is cultivated as an annual or biennial and then harvested. In the first year, it does not form flowers, so they can concentrate their efforts on the formation of a bulb. From the second year it is possible to form a flower in addition to the bulb and leek. The flower can take on shades between white and purple. Both the leek and the bulb of the onion are used, the leek being much milder than the bulb. The onion, once it has formed its leek, gives off a distinct, characteristic odor that can be smelled far and wide. Today, the onion is used in cooking mostly in small quantities because of its flavor. In the past, there were whole dishes whose main ingredient was the onion as the sole vegetable, such as the onion tart.
